Salmon Pesto Pasta

Fresh Salmon with refreshing pesto.

This one is a quick and easy recipe that can feed 5 people easily.

Ingredients

  • 4 boneless salmon fillets
  • 1 jar of green pesto
  • 1 bag of green beans
  • 1 bag of tenderstem broccoli
  • 3 tablespoons double cream
  • Parmesan to serve
  • Penne Pasta
  • Basil leaves (optional)

Method

  1. Preheat the oven to 200 degrees (electric)/180 degrees (fan)
  2. Take the salmon fillets and loosely wrap in foil. Place on a baking tray in the centre of the oven. Start a timer for 20 minutes.
  3. Bring a large pan of water to the boil. Add a little salt. Measure out the pasta, approximately 80g per person. Once the water is boiling, drop in the pasta.
  4. Whilst the pasta and salmon are cooking. Wash the veg and trim the ends. If the broccoli stems are large slice them down the middle to make them smaller.
  5. Once the pasta is almost cooked, after about 10-12 minutes, drop the green veg into the pan with the pasta. Cook for a further 5 minutes.
  6. The timer on the salmon should be almost up. Check the salmon, turn down the oven if necessary but leave wrapped in foil.
  7. After the veg has been boiling for 5 minutes. Check the pasta and if you are happy with the veg and pasta drain the water away.
  8. Place the pan or a really low heat. Add the jar of pesto and stir through the veg and pasta.
  9. Remove the salmon from the oven. Peel of the skin and add the fillets into the pasta. Briefly stir through salmon, gently breaking up the fillets as you stir. Try not to break down the fillets too much. It's nicer to have bigger chunks of the salmon.
  10. Remove the pan from the heat. Stir in 3/4 tablespoons of double cream.
  11. Sprinkle on some parmesan and some pepper for seasoning. Stir it through the pasta.
  12. Serve with some more parmesan and a handful of fresh basil leaves if you have them.
